Lack of motivation and taking 11 credit hours in school are my excuses. But really, no excuse is a good excuse. I am super excited to say that I'm doing the South Beach Diet starting the day after Christmas. I would like to lose about 10 lbs. before our cruise in February. Eeek. I have The South Beach Diet Book, The South Beach Diet Cookbook, and two other South beach Diet books on hold for me at the library. I made black bean soup and froze it so I can grab and go when I haven't prepped my lunch. I plan on making Quiche cups for my breakfasts and freezing them for breakfast on mornings when I'm in a hurry. I have been slowly gathering almonds, allowed desserts, etc. so I'm not overwhelmed all at once with my South Beach Diet shopping list. The only thing I'm really nervous about is that I will be on a road trip helping my friend Ashley move right smack in the middle of the two weeks of Phase 1. I think I can do it but it's so easy to grab a slim jim, some chips, and a soda for snacks when you're stopped at a gas station. I'm hoping to find some packaged veggies, light string cheese, and maybe even some hard boiled eggs at stops along the way. An omelet would be a good choice when we stop for food. I do need to do a little more research to find things that will be easy to get on the road trip. I have never dieted, so I'm excited for the challenge! He has been going basically every day since we signed up. I did cardio and weights on Friday with Dave, Water Aerobics on Saturday, and more cardio on Sunday. I have been so sore! I think my body is just now recovering. We get free tanning too and I am definitely loving that part. We are going on a cruise in February and we will definitely be hitting the tanning bed....and the gym......hard core before the cruise. I'm also happy that it's fall and it's time to run outside!! I was only used to running about 4-6 miles at a time. For some reason I feel like it won't take me too long to get back to those 4-6 miles when I start back up again. I have 11 credit hours this semester, plus full time work. I'm inky used to having about 8 or 9 credits. It has been very stressful and u find myself using my lunch breaks for homework rather than running. <br />Wow. Where have I been? Have I been clogging my arteries with hydrogenated oils??? That's what my co-worker told me the other day when she brought me a gift of organic peanut butter. I am not one to look at labels. I don't like to know what I'm doing to my body or stress about calories. Now I feel like I'm dying slowly but surely from clogged arteries. Yuck. YUCK. I am happy though, knowing one of the main ingredients I depend on for strong running, is now something that's actually good for me. <br />This organic peanut butter was quite the experience for me at first. You know the old talk about peanut butter sticking to the top of your mouth and needing a full glass of milk to get through a pb&j?? Yeah, I never got it either. The peanut butter I was used to was never like that. Now I understand. Peanut butter, in its natural form, is totally sticky. Like I-can't-answer-the-phone-and-make-sense-sticky. I love it though. After I eat it I have like a peanut chunk here and peanut skin there. It's liker I'm eating real ground up peanuts. Strange, I know. So, the lesson to be learned from this post is to throw out your Jif, or anything else that has loads and loads of artery-clogging substances and switch to something natural or at least closer to natural. These days we think it's normal to eat corn that's been sitting in a tin can for 6 months. That is not normal. And not ok. Our fresh produce at the grocery store already has enough harmful chemicals in it without being stuffed in a can for a year.
<br />Trust me, I'm no wiz when it comes to what is healthy and what is not but I do have pretty good common sense working for me. Here are some changes I have made in the past few years, food wise...
<br />1. Margarine. So, I am not a fan of margarine but it is MUCH easier to deal with than cold butter when you're making a grilled cheese sandwich, garlic bread, etc. Now instead of using pure margarine when I do use it, I use Brummel and Brown made with yogurt.

<br />2. Cheese. I figure with cheese, the more convenient it is, the more processed it is. I'm talking about pre-cut slices, grated cheese, etc. I always buy a big old block of cheese and when I need grated cheese, I do what we did back in the good old days.......I GRATE IT! Imagine that!

<br />3. Oatmeal. My oatmeal is very important to me. I have oatmeal almost every morning for breakfast. Instead of taking the cheater route with the quick oats, I always get the old-fashioned Quaker Oats. I should probably go with the steel cut oats, but at least I'm not getting the quick one-minute oats.

Wheat bread. White bread is of the devil. There aren't many nutrients in it at all. I don't even feel very good after I eat it because it's just yucky. With so many people on a 'health craze' and switching to wheat bread, there's a lot of fake wheat bread out there too. When you pick out bread, you should pick one that has the first ingredient listed as whole wheat. This should also be the only flour mentioned in the ingredients. Look for bread that says '100% whole wheat.' <br />6. Low fat. Low fat can also mean 'more chemicals' or 'more processed' or 'more un-natural.' I don't go for things just because they say low fat. I actually try to steer away from these things. They usually only have less fat in them because they have chemically altered it just so they could claim there was less fat in it. So, itt is harming your body in other ways rather than fat. For example, ice cream. I love me some ice cream. When I pick it out though, I get regular. Then I don't have two bowls in one sitting. The rule is to control your portion size. Just because you got low-fat or fat-free ice cream doesn't mean you can eat as much as you want and not gain weight from it. Confusing, I know ;)

I feel like I'm cussing when I say the words 'finals week.' It was pretty bad. I was stressed all week, cramming. I don't feel very good about how they went either. Oh well. I don't think I'll have to take anything twice. That's what counts, right?? Ha ha. Ok ok, that's not all that counts. I do want good grades. Anywho, what does this have to do with running you ask? Well, I put off running all week because I was studying every free minute I had. I haven't run in about a week and a half. No good! I did do Yoga yesterday though, and golfed. Oh, and did a river run with Dave and some friends. It was so fun. I'm not sure if my abs hurt from all the laughing or from the physical exertion. I will be back to the gym tomorrow though. Yay!
<br />I just found out there is a mini-tri that you can do called a novice. It is only like a mile and a half run. This is much more likely to actually happen with my school schedule. Sweetness!

It is just way too hot. I'm hoping it will cool down by the end of August but it seems like we are having longer winters and longer summers the past couple years, so who knows when it will start cooling down. I'm not complaining though, I have been thoroughly enjoying my time at the pool, the lake, and the golf course. I have been swimming laps at my chiro's request. I have tense muscles between my neck and shoulder and he says swimming will help loosen those muscles. This weekend I am going to the lake with my family to soak up the sun.<br />As far as running goals go right now, I have another mud run in September that I'm hoping I can find someone to do it with me. It was so much fun last year! Running 6 miles through swamps with mud squishing around in your shoes is quite the experience. The next running goal is a half marathon. My friend Katie and I want to meet up in TX to run a half next spring. I am way excited and I hope it happens!!<br />I'm going to say it.......once you say something it officially makes it a challenge you take on with yourself. Here it goes........I want to do a mini triathlon. I remember being nervous to say i was thinking about Ragnar. Now I'm nervous to say I'm thinking about a mini tri. This will be especially difficult because it takes some intense training. You not only have to train in the three areas of running, swimming, and biking but you have to train the transitions from one to the other. I have heard that's the hard part. When you are biking intensely, your muscles are so focused and working so hard then all of the sudden you want them to run and use different muscles and they are sitting there going "WTF??" Then throw in the swimming. I do need a bike first but I think I can just borrow one from someone. A mini tri isn't all that long so you don't HAVE to have a bike that fits you perfectly. I might just borrow my mom's mountain bike for it. Anyways, I am busy with work and summer school right now and adding 11 credits for school in the fall so I think it will be a while until I have time to train for it. It's definitely something I have been thinking about a lot though. Ok, well wish me luck on my run today! I wanted to post pictures and tell everyone all about Ragnar and why they should do it. I haven't been able to get the pictures off my camera. I don't know where the cord is and I can't find my memory card converter. Oh, my life is so hard! Lol. It's really not. I just haven't made it to Wally World for a new converter. So.....let me just tell you that ragnar was AMAZING! I shouldn't have been scared at all. So silly. So the most I had ran before Ragnar was probably 6.5 miles. My three legs for Ragnar were 3.4m, 7m, and 6m. My first run was hard because it was super hot. The second wasn't too bad, but super long! It was in the dark so I had a head lamp on and just jammed out to my music. The moon looked amazing that night, so that made it more enjoyable. I have a funny confession. My favorite song that came on while I was doing my night run was Don't Take it Personal by Monica. It's an old song but I was seriously lovin it. You need to YouTube it. My third run was the next morning at about 9am after having about 45 minutes of sleep. I think that's what made this one so hard. It got pretty hot towards the end of it too. I made it though and I cried a little when I finished. I felt so good about what I had accomplished plus I was exhausted so I got a little emotional. The girls who were in my van were just so much fun. We dressed up like Snooki from the Jersey Shore. The first day, we all had Snooki 'poofs'. Lol it was hilarious. It was so cool to see how everything worked out. I think hearing about how it would all work was just a little overwhelming so I didn't really understand the logistics of it all. The worst part was not sleeping, the second worst part was that our SUV was so packed with everyone's shiz that there wasn't much room at all to try and nap. There was much more to it than I have time to write about but pretty much it was amazing and I hope to be able to do it again next year. It is already sold out but I'm hoping that someone will need a runner for their team before then. My best friend Katie and I are also planning to do our first half marathon in Texas in March. I don't have any on-campus classes this semester, only online ones, so I have had a little more time to try out recipes. I love them! I love new music, but especially new running music. It's nice to be able to get lost in an awesome song while you run. Running is a very mental thing for me. You're looking at a girl who had to start from the very very bottom of the running ladder and who is still struggling to ever-so-slowly raise the amount of miles I can run at once. My training has been taking forever, but I'm ok with it. I know that when you take your time training, you are much less prone to injury.<br /><br /><br />The furthest I have ran so far is 6 miles. I made good timing, but I was on the treadmill. Poop. I have recently found out that I enjoy running outside more than I thought! I have done a few outside runs in the past few weeks and it's nice to have a change of scenery. Looking out the window at the rugs in front of the bank across the street just isn't cutting it. In June and September there are two more Dirty Dash's. I think I may only be doing the one in September. She lives in NY and we are going to meet up in Texas to run it. It is the Dallas, TX half marathon. I am pumped! I can't wait to see her! That makes me sad.....like this...=( I do have some good news. To me it's good news. I can finally run 4 miles straight! It's taken me a while to get to this point, and I know there are millions of people who can run for much longer than that, but I started this running thing barely being able to run one mile so I feel pretty good! I've also been making very good timing, I can run 4 miles in about 36 minutes, which is 9 minute miles. I've been told that's very good! So my next venture will be 5 miles. I am going to sign up for some 10k's soon (6 mile runs) so get me motivated to get to 6. I need to start running outside though. It's harder for me to run outside so I'm a little nervous but I'm sure I'll be just fine. Something about the concrete shaking up and down in front of me while I run makes me dizzy and not feel well, but oh well. Gotta do what ya gotta do! Two weeks ago I got a pretty bad head cold. It sucked!!! I haven't had one that bad in a while. Anyway, let's just say I am STILL coughing up nasty shiz. I stopped running for a week or so because of it. Then I stubbed my toe so bad that popular opinion is that I broke it. It was so swollen and purple, I've never experienced that before. Then Thanksgiving rolled around and I had signed up to run the Utah Food Bank 5k that day. I was nervous, with all of these setbacks going on! Dave came with me and waited at the finish line for me. It sucked cuz I had to stop every few minutes to blow my nose. The snot was just making it so hard to breathe!!! Lol. Oh, and ummm yeah it was BUTT ASS COLD!!!!!! It doesn't usually get below like 20 degrees in Utah during winter, and it just so happened to be 7 degrees the morning of the run!!! Yeah. Anywho, I thought at the beginning of the run "I will never do this again!" But after seeing my time results (I was 15th out of the 5k women who had a timing chip) I feel happier about the whole experience and definitely think I'll do it again next year. It feels SO great to go out Thanksgiving morning and get in a good work out, for a good cause, and then go stuff your face with the yummiest food ever!!! I hope everyone had a great Thanksgiving! Frick. Frack. So, an update is in order...I am still slowly getting ready for Ragnar. The thought kinda scares me. I don't think I'm alone. I think it scares a lot of people. I have been running 2 times/week. I wish it was 3 times/week but with school and having an actual life, I find myself running twice a week. So shoot me. I have gotten to the point where I can comfortably run 3 miles straight though. This is pretty exciting for me. I have never been a big runner in the past. I used to do it every now and then for cardio and even then I was only running a mile here and there. I signed up for a Thanksgiving 5k. Pretty excited about that.<br />Dave and I went skiing up at brighton on Sunday. It was so so fun! I picked back up right where I had left off. We had a blast. Not all of the runs were open, but it was still super fun. We had lunch at Molly Green's and a couple drinks. It was a prefect day. I can't wait for more of those to come!!! We will be out ever Sunday and Kayden will be up there with us every other Sunday. He told me, "just run two miles and get it over with as fast as you can. What matters is the miles." I did it in about 18:30 I think and I was very happy about that! I am going soon with my friend from work. =)</div><br /><div>In my last relationship, I was with someone who was so needy of my time and jealous when I spent time on anything besides him, that I didn't get to go out and do fun things like this. My boyfriend, Dave, is so understanding and has no problem at all with me going out and doing things that make me happy. He even told me he thinks it's sexy how active I am =). Lol. maybe TMI, but I'm just in a really happy place right now and most of it has to do with both Dave and working out. I have accomplished a lot in the past few months and I feel great about it. I still have a huge feat ahead of me.....<strong>RAGNAR</strong>. Yikes. Here's a few pictures of my accomplishments this summer.....I completed the Lone Peak hike. It is now the longest hike I have ever done(it took us 12 hours!!!) In September I did the Dirty Dash which was one of the FUNNEST things I have ever ever done. For Real!<div>So I have been slacking on working out the past month or so. Dave and I have been so super busy that it's hard to make the time. I know, I know. There's no excuse. Or, as my friend from work would say "Excuses are like ass holes, everyone's got one and they all stink." So he was just asking me why I hadn't been running, so I brought my running stuff to work and went at lunch! It felt so good. I cannot emphasize too much how good you feel after a good run that challenges you. Since I haven't been running much lately, I walked 5, ran 20, then walked 5. It felt awesome. I'm going to start going Mon. Wed & Fri. at lunch. Plus, some people at my work put together a pilates group that is going to meet once/week at lunchtime so we can get in a good workout during the workday!</div><br /><div>I have been hiking about once/week and decided I'm going to try and do the 'big hike' with my hiking group this year. The big hike this year is Lone Peak. I've heard it's pretty rough. We have training hikes coming up on the 6th and the 11th of September and then the big hike will be the 18th. The following weekend, I have the Dirty Dash. It's a 10k.....in the mud!!!!!!!!! Am I nuts here?? Probably! Lol. I just hope that if I'm running three times/week that all of this stuff won't absolutely kill me. Paid my 90 bucks. There's no going back now (shakin in my booties). I have been told by our team leader, Metta, that I need to be able to run 30 minutes straight by the end of this year, to be on track for training for this event. I'm not worried about that at all, I'm just worried about what comes after that. Lol. If you aren't familiar with Ragnar, it is a relay run from Provo to Logan, I think. I might be a little off on my facts but that's the gist of it. I have been told that I will probably be running about 14 miles for my part. 14 miles in 24 hours. Sounds fun! I'm excited for some night running coming up this fall, though. Anyways, the 2nd thing is that I went running up Emigration Canyon today with a friend from work. It feels SO DANG GOOD to exercise at lunch. I have a lot of energy now and I just love that I took advantage of having a 1 hour break in the middle of the day. I have been bothered lately with the fact that mostly every single one of my evenings is booked and I don't have time to go running or walking. Well folks, bring your tennis shoes to work and go on your lunch break! It's perfect. Whether you have only 30 minutes or an hour, think of the difference it could make if you went every single day to go walking or running on your break! Even if you go maybe Mon. Wed. Fri. or do Tues. Thurs. you're bound to be happy with the results. You will feel better and it may help you lose those couple pounds we all sit and think about. Ask a friend from work if they would like to go with you, take the book you've been wishing you had time to read, just get out there! I know that I personally sit in the breakroom every day for lunch and the thought of all the exercise time I'm wasting, makes me want to shake myself! Ha ha. We did a long hike up Big Beacon behind the U. It was my first real hike of the year and it was rough! It took us almost 4 hours to get up and back down. My feet were hurting so bad and my legs were shaking by the time we got back to the bottom. My calves and butt are sore. I love the feeling of having sore muscles though! I know that I made progress when my muscles are sore. If anyone wants to get on the invite list for the hikes, just let me know and I will pass your email address on to Kurt, our hiking leader. We go every Thursday at 5:15 pm and are always going to a different place. They also do a couple big of out of town hikes, which I didn't get to do last year but am looking forward to this year. I ran my 5k on Saturday and I was scared. I was thinking I would be just so awfully tired and have a hard time finishing. It was actually quite the opposite. I didn't have a hard time running the whole way and when I got to the finish line I was like......really? That's it?? We're done? I think I do =) Anyways, it was the Race for the Cure 5k, for the Breast Cancer Foundation and it was very touching to see all of the support and people out there for a good cause. When we got there, Michelle and her dad said, "let's go do some hiking." I'm ALWAYS down for hiking. It's one of my favorite things. I have seen some amazing things and had some amazing experiences while hiking. So, they decided to take me to Arches National Park. I had no idea what I was in for.......I had no idea that was where DELICATE ARCH WAS!!! I must be sheltered... but I was soooo excited. I suddenly was about to see one of the wonders of the world. I think that with Yoga and Hiking, I have really foung two things that I completely enjoy that will help keep me fit throughout my life. Next step...Timpanogos Caves Hike!! YIKES!!! Yikes is what first comes to my mind. lol. It's in about two weeks. I don't think I'm going to be able to run this weekend, which sucks. I can barely walk up and down the stairs right now.....so yeah. Pilates, you rock my world but make it difficult to physically function like a normal person in every day life. I haven't done that in a while. I usually walk inbetween running. It wasn't the easiest thing ever, but I'm ready to do it again! It feels soooo good to run. Oh man, I love it. Oh, and PS- I LOVE MY NEW RUNNING SHOES. They are my babies. I feel as excited as you feel when you get a new car. And this is much cheaper. Ha ha. Not cheap exactly, but much cheaper than a car! ;) So I ran in them for the first time last night and I loved life. I think my first 5k will be on May 1st. I can't do the one this weekend like I wanted to because I totally overlooked the fact that I have an 8 AM CALCULUS CLASS ON SATURDAYS. Remind me again why I signed up for that??? Yeah I don't remember either. Anyway, it will be over in about two weeks, so I'll be able to start my 5k adventures. Very excited. It's funny how if you have a friend to go with, it can be so so exciting but if you have to go alone and don't have motivation it can feel like you're dreading going. I'm excited. I hope i hurt as bad tomorrow as I did last time. I always hate it how you do something new and your muscles hurt SO bad, and then you try it again and get no sore muscles. I do think it's pretty cool how hard you can work yourself just by using your own body! Last time I went to this Yoga class, there was a surfer dude in back of me who kept making sex noises and the teacher ended up saying "I think I'm going to record this class and sell it to a phone sex company!" Ha ha. Made me laugh, cuz we all knew she was talking about the awkward guy in back of me who couldn't keep the noises in. I had to keep stopping cuz what they were doing was so hard, and one time I looked around and this guy was just chillin on his head. Like, he was doing a head stand. People are nuts! Next week, I'm going with the same friend to a Pilates class for my first time! And I've been trying to get out running lately so I can run the 5k on April 17th. I think I'm gonna go for it and just try my best!<br /><br />PS-I think I'm going to take a picture of my pantry and post it soon. It might bring some laughs cuz of all the crap I have in there!!
